Agar, scientifically known as agarose, and also called agar-agar, kanten, sea moss, jelly powder, agaroid, stone flower jelly,kanten, or vegetable gelatin, is a type of plant gum composed of two parts: agarose and agaropectin. It is commonly made from marine products such as kirin moss, stone flower moss, and Jiangli. Agar is a colorless, shapeless solid used as a thickener, gelling agent, suspending agent, emulsifier, stabilizer, and preservative.
