L-Glutamic acid

Glutamic acid is a non-essential amino acid in the human body, which can be rapidly synthesized in vivo through intermediates of glucose metabolism (such as α-ketoglutarate), without relying on additional dietary supplementation. The core feature of its molecular structure is the carboxyl group (-COOH) in its side chain, classifying it as a typical acidic amino acid. It is not only a key raw material for protein synthesis but also plays a central role in energy metabolism, neural signal transmission, and nitrogen balance regulation — it can directly participate in the tricarboxylic acid (TCA) cycle to provide energy, serves as a precursor for the main excitatory neurotransmitters in the central nervous system, and is a precursor for the synthesis of various nitrogen-containing molecules in the body (such as glutamine and γ-aminobutyric acid). Due to its acidic nature and wide range of physiological functions, glutamic acid is extensively used in the food industry, pharmaceutical field, and molecular biology experiments and is currently one of the most produced and widely applied amino acids.
