Arizona agar (SA) is a selective identification medium, which is specially used for the separation and identification of Arizona bacteria (now classified as Salmonella Arizona subspecies). Its selectivity depends on bile salts and dyes (such as brilliant green or sodium deoxycholate), which can effectively inhibit the growth of non-target bacteria. The identification system is based on a unique combination of sugar alcohol fermentation: it usually includes lactose, sucrose and Euonymus alcohol. Arizona bacteria can slowly ferment lactose (2-7 days) and rapidly ferment Euonymus alcohol, which produces acid in the process, making the neutral red indicator of colony and surrounding culture genes turn red and pink. This feature can be distinguished from most salmonella that does not ferment lactose (colony is colorless). This culture medium is an important tool for detecting Arizona bacteria in poultry, reptiles and related foods.
