PPO (EC·1.10.3.1) mainly exists in animals, plants, microorganisms, and cultured cells. It is a copper-containing oxidase that can oxidize monohydric phenols and dihydric phenols to produce quinones, thereby causing browning. It is closely related to fruit and vegetable processing, tea quality, and tissue culture, among other things.
