Sucrose invertase (Ivr) catalyzes the irreversible decomposition of sucrose into fructose and glucose, and is one of the key enzymes in sucrose metabolism in higher plants. According to the optimal pH, invertases (Ivr) in higher plants are divided into two types: acid invertase (AI) and neutral invertase (NI). NI mainly exists in the cytoplasm and is responsible for decomposing sucrose in the cytoplasm into fructose and glucose.
