GCDH (EC 1.1.1.47) catalyzes the production of D-gluconate and NAD(P) to D-gluconate and NAD(P)H, which are abundant in the liver of higher animals and in Acetobacterium weak oxidation. The use of GCDH in the production of fructooligosaccharides can not only remove glucose from fructooligosaccharides and increase the content of fructooligosaccharides, but also produce gluconic acid combined with calcium ions to produce calcium gluconate is an ideal calcium supplementation preparation. Therefore, GCDH has become an ideal enzyme for the preparation of high fructooligosaccharides.

GCDH catalyzes the formation of D-gluconate and NAD to D-gluconic acid and NADH, and the NADH rise rate can be measured at 340 nm to reflect GCDH activity.
