The saccharidase hydrolyzes soluble starch to form glucose, and the 3,5-dinitrosalicylic acid forms reddish-brown compounds, which have the maximum light absorption at 540nm, and the color of the reaction solution is directly proportional to the amount of glucose within a certain range, and the activity of the saccharidase can be determined.
