α-Galactosidase (α-galactosidase, α-gal, EC 3.2.1.22) is an important enzyme that widely exists in plants, microorganisms, and animals. In plants, it is found in coffee beans, figs, bean sprouts, coconuts taro tubers, cucumbers, grapes, rice, papayas, etc., as well as in certain bacteria (such as Streptomyces, Bacill coagulans, Bacillus thermoamylovorans, etc.) and fungi (such as Aspergillus niger, Rhizopus Penicillium purpurogenum, etc.). α-GAL decomposes p-nitrophenyl α-D-galactopyranoside generate p-nitrophenol, which has a maximum absorption peak at 410nm. The α-GAL activity is calculated by measuring the increase rate of absorb.
