Phytase is a general term for a class of enzymes that catalyze the hydrolysis of phytic acid and its salts into inositol and phosphate (salt), which can convert phytic acid and its salts in food and feed into available phosphorus for organisms to use, reduce the phosphorus content in feces, reduce environmental pollution, and improve the absorption and utilization of nutrients, so it has extremely wide research and application value.

Under certain temperature and pH conditions, phytase hydrolyzes the substrate sodium phytate to form inorganic phosphorus and inositol derivatives, and inorganic phosphorus reacts with ammonium molybdate developer in an acidic environment to form blue complexes, with a characteristic absorption peak at 700nm, and phytase activity can be calculated according to the change of absorbance value at 700nm.
