Xylanase (EC 3.2.1.8) is mainly produced by microorganisms and can catalyze the hydrolysis of xylanase, also known as pentoglycase or hemicellulase, which can decompose the raw material cell wall and β-glucan in the brewing or feed industry, reduce the viscosity of the material in brewing, promote the release of effective substances, and reduce the non-starch polysaccharides in the feed, and promote the absorption and utilization of nutrients, so it is widely used in the brewing and feed industry. ACX is generally isolated from acid-resistant fungi, bacteria and some molds.

ACX can degrade xylan into reducing oligosaccharides and monosaccharides in an acidic environment, and further undergo a color reaction with 3,5-dinitrosalicylic acid under boiling water bath conditions, with a characteristic absorption peak at 540nm, and the color of the reaction solution is directly proportional to the amount of reducing sugars produced by enactal hydrolysis.
