CAD is one of the key enzymes in the lignin biosynthesis pathway, and is the last step in the lignin monomer synthesis reaction, catalyzing the production of a variety of different cinnamaldehydes (coumaraldehyde, glucousinaldehyde, and pine cypressaldehyde, etc.) to the corresponding cinnamon alcohol. The study of this enzyme can explore the metabolic mechanism of lignin deposition during the development of various biological cells, and provide a basis for reducing the content of fruit stone cells and improving their quality.

CAD catalyzes the formation of cinnamaldehyde and NADPH in cinnamaldehyde and NADP, and the NADPH formation rate can be measured at 340nm to reflect CAD activity.
