LPS, also known as glyceride hydrolase, catalyzes the hydrolysis of triglycerides to produce fatty acids and glycerol (or diglycerides and monoesters). LPS is widely found in a variety of organisms. Abnormal elevations of LPS in serum are common in pancreatitis and pancreatic cancer.

LPS catalyzes the hydrolysis of oil esters into fatty acids, and the activity of LPS can be calculated by measuring the fatty acid formation rate by copper soap method.
