Pectin is one of the main components of plant cell walls, divided into water-soluble pectin and insoluble pectin, that is, protopectin. Because of its good emulsification, thickening and gelling effects, it has a wide range of applications in food, textile, printing and dyeing, tobacco, metallurgy and other fields.

Protopectin is hydrolyzed into soluble pectin in dilute acid and further converted to galacturonic acid, and the product is condensed with carbazole in strong acid to form a purple-red compound with a characteristic absorption peak at 530 nm.
