Ascorbic acid (AsA), also known as vitamin C, functions as a coenzyme, free radical scavenger, electron donor/acceptor, and substrate for the biosynthesis of oxalate and tartrate, among other roles. As the most important antioxidant in plant cells, AsA plays a pivotal role in protecting chloroplasts from oxidative damage and is also one of the key indicators for evaluating the quality of crop products.

Ascorbate oxidase (AAO) catalyzes the oxidation of AsA to form dehydroascorbic acid (DHA). The content of AsA can be calculated by measuring the oxidation rate of AsA.
