Neutral Protease (NP) catalyzes the hydrolysis of proteins under certain temperature and neutral pH conditions. Owing to its characteristics such as safety, non-toxicity, strong hydrolysis ability, and wide range of action, neutral protease is commonly used in the production of food, feed, cosmetics, and nutritional health products.

Under neutral conditions, NP catalyzes the hydrolysis of casein to produce tyrosine. Under alkaline conditions, tyrosine reduces phosphomolybdate compounds to form tungsten blue, which has a characteristic absorption peak at 680 nm.
