Polyphenol oxidase (PPO) is mainly present in animals, plants, microorganisms, and cultured cells. It is a copper-containing oxidase that can oxidize monophenols and diphenols to produce quinones, thereby causing browning. It is closely related to fruit and vegetable processing, tea quality, and tissue culture.

PPO can catalyze catechol to produce o-benzoquinone, and the latter has a characteristic light absorption at 410 nm.
