Anthocyanins are a class of edible natural pigments that are easily soluble in solvents such as water. They give plants a variety of colors and themselves have multiple health-beneficial effects, thus having broad application prospects in the natural food pigment, health product, and pharmaceutical industries.

The content of anthocyanins is determined based on their structural properties under different pH conditions. At pH 1, anthocyanins have a maximum absorption peak at 530 nm; while at pH 4, anthocyanins convert to colorless chalcone forms, which have no absorption at 530 nm. The content of anthocyanins in the sample is calculated by measuring the absorbance values at 530 nm and 700 nm under different pH conditions.
