Tannase (TAN) Assay Kit
Tannase (TAN) Assay Kit
Tannase, full name tannin acyl hydrolase (EC 3.1.1.20), exists in tannin-rich plants and is also widely present in microorganisms. It can hydrolyze ester bonds and depside bonds to produce gallic acid and glucose. Propyl gallate (PG) is used as the substrate for the enzymatic reaction of tannase. It has a characteristic absorption peak at 270 nm, and the tannase activity is calculated based on the change in absorbance before and after the reaction.
