Oligomeric Proanthocyanidins (OPC) are a class of polyphenolic compounds consisting of flavanol monomers and their polymers. They are widely present in various organs of plants, exhibit strong antioxidant properties and free radical-scavenging effects, and are extensively used in the pharmaceutical, food, cosmetics, and health product industries.

Under acidic conditions, the resorcinol and phloroglucinol on the A-ring of plant OPC undergo a condensation reaction with vanillin to form colored compounds, which have a characteristic absorption peak at 500 nm. The content of OPC in plants can be calculated by measuring the absorbance at 500 nm.
