Nitrate reductase (NR, EC 1.7.1.3) is widely present in plants. It is a key enzyme for the conversion of nitrate nitrogen to ammonium nitrogen in plants and also an inducible enzyme, which affects the yield and quality of crops.

NR catalyzes the reduction of nitrate to nitrite. NADH has a characteristic absorption peak at 340 nm, and the change in absorbance at 340 nm can indicate the enzyme activity.
