Glutamic acid (Glu) is widely present in animals, plants, microorganisms, and cultured cells. It is not only one of the 20 amino acids composing proteins but also participates in the synthesis of various amino acids through transamination, serving as one of the main amino group sources in organisms. In addition, Glu is the main active component of monosodium glutamate (MSG) and is commonly used as a food additive and in the production of spices.

Glu is extracted using a dedicated extraction solution, followed by color development with a chromogenic reagent. After color development, the determination is performed at a wavelength of 570 nm.
