Proteins contain three sulfur-containing amino acids: methionine, cystine, and cysteine (Cys). Among them, Cys is the only sulfur-containing amino acid with a sulfhydryl group (-SH). It is converted from methionine and can interconvert with cystine. Cys is involved in the formation of protein disulfide bonds, is often a component of protein active centers, and can also provide sulfhydryl groups for other physiological and biochemical reactions. In addition, Cys accumulates in large quantities on the surface of the skin and mucous membranes; it maintains the activity of important sulfhydryl enzymes during keratin formation, supplements sulfhydryl groups to maintain the normal metabolism of the skin, and regulates the production of underlying melanin by pigment cells in the innermost layer of the epidermis. It has effects such as skin whitening, detoxification, and improving inflammatory and allergic skin conditions.

Cys reduces phosphotungstic acid to form tungsten blue, which has an absorption peak at 600 nm. The content of Cys is calculated by measuring the absorbance at 600 nm.
