Cellulase (CL, EC 3.2.1.4) is present in bacteria, fungi, and animals. It can catalyze the degradation of cellulose and is a type of enzyme preparation widely used in fields such as medicine, food, cotton spinning, environmental protection, and renewable resource utilization.

The 3,5-dinitrosalicylic acid (DNS) method is used to determine the content of reducing sugars produced by the degradation of cellulose catalyzed by CL.
