C1 (EC 3.2.1.91) is present in bacteria, fungi, and animals, and is one of the components of the cellulase system. It catalyzes the release of cellobiose and glucose from the terminal non-reducing ends of polysaccharide chains.

The 3,5-dinitrosalicylic acid method is used to determine the content of reducing sugars produced by the degradation of microcrystalline cellulose catalyzed by C1.
