The reducing sugars produced by the hydrolysis of filter paper by filter paper enzyme can react with 3,5-dinitrosalicylic acid to form a reddish-brown amino compound, which has a maximum light absorption at 540 nm. Within a certain range, the color depth of the reaction solution is proportional to the amount of reducing sugars, so the activity of filter paper enzyme can be determined and calculated.
