Glucoamylase Assay Kit

Glucoamylase (EC 3.2.1.3), also known as γ-amylase, is an exo-type glycosidase. It hydrolyzes α-1,4 glycosidic bonds and α-1,6 glycosidic bonds from the non-reducing ends of starch, completely decomposing starch into glucose. Therefore, it is widely used in industries such as alcohol, liquor, antibiotics, amino acids, organic acids, glycerol, and starch sugar production, and is one of the important industrial enzyme preparations in China.

Glucoamylase hydrolyzes soluble starch to produce glucose, which reacts with 3,5-dinitrosalicylic acid (DNS) to form a reddish-brown compound. This compound has a maximum light absorption at 540 nm. Within a certain range, the color depth of the reaction solution is proportional to the amount of glucose. Thus, the activity of glucoamylase can be determined and calculated.
