Trehalose is a functional oligosaccharide with properties such as non-reducibility, moisturizing ability, thermal and acid stability, and anti-freezing capacity. Trehalose Synthase (TS) can catalyze the conversion of maltose into trehalose, which is one of the key pathways for trehalose biosynthesis. This kit uses glucoamylase to decompose the remaining maltose into glucose. The glucose content is determined by the glucose oxidase method, and the activity of trehalose synthase is expressed based on the amount of maltose reduced.
