Citric acid (CA) is a common organic acid in organisms and an important food flavor substance. Additionally, it is the product of the first reaction in the tricarboxylic acid cycle.

Under acidic conditions, citric acid reduces hexavalent chromium (Cr⁶⁺) to trivalent chromium (Cr3⁺). Cr3⁺ has a characteristic absorption peak at 545 nm. The content of citric acid in the sample can be calculated by measuring the increase in absorbance at 545 nm.
