The α -amylase detection kit adopts DNS colorimetry principle, and accurately quantifies the catalytic activity of α-AL by detecting the increase of reducing sugar at the wavelength of 540nm. The kit contains soluble starch substrate, DNS developer and phosphate buffer system, which can specifically detect the endohydrolysis process of α-1,4- glucoside bond. The detection sensitivity is 0.005 U/mL, which is suitable for the study of starch metabolism in grain germination and microbial fermentation samples, and provides a reliable tool for the development of enzyme preparations in food processing and feed industry.
