The detection kit for amylopectin content adopts the principle of dual-wavelength colorimetry, and the characteristic absorption value of iodine complex of amylopectin and amylose is detected simultaneously at the wavelengths of 510nm and 620nm through dimethyl sulfoxide solubilization-iodine color development system. The kit contains dimethyl sulfoxide solubilizer, iodine-potassium iodide chromogenic agent and buffer system, and accurate quantification is achieved by standard curve method. The detection range covers 10%-99%, which is suitable for the amylopectin proportion analysis of grain and starch samples, and provides standardized solutions for crop taste quality evaluation and food processing characteristics research.
