The pectinase detection kit adopts the principle of multi-index joint inspection, and simultaneously detects the formation of reducing sugar and unsaturated products by DNS method and ultraviolet spectrophotometry, so as to comprehensively evaluate the activity of pectinase complex enzyme system. The kit contains polygalacturonic acid and high esterification pectin dual substrate system, matched with specific buffer and chromogenic reagent, which can distinguish the main components such as endogalacturonidase and pectin lyase. The detection sensitivity is 0.01 U/mL, which is suitable for enzyme activity analysis of fungal fermentation broth and processed samples of fruits and vegetables, and provides a complete solution for enzyme preparation process optimization and biotransformation research.
