Pectin lyase detection kit adopts the principle of ultraviolet spectrophotometry, and accurately quantifies the racemic enzyme activity of PL by monitoring the rising rate of absorbance of enzymatic hydrolysate at the wavelength of 235nm. The kit contains high-purity pectin substrate, Tris-HCl buffer system and calcium ion cofactor, which can specifically detect unsaturated bond-containing products generated by β -elimination of broken glycosidic bonds. The detection sensitivity is 0.005 U/mL, which is suitable for pectin degradation analysis of microbial fermentation broth and plant extracts, and provides a reliable tool for enzyme preparation development and food technology optimization.
