The polygalacturonase detection kit adopts the principle of reducing sugar determination, and detects the absorbance change of enzymatic hydrolysate at 540nm wavelength by DNS method to accurately quantify PG enzyme activity. The kit contains high-purity polygalacturonic acid substrate, DNS developer and buffer system, which can accurately reflect the content of galacturonic acid produced by enzymatic hydrolysis. The detection sensitivity is 0.02 U/mL, which is suitable for fruit maturity evaluation and enzyme activity analysis of food processing samples, and provides a reliable tool for postharvest physiological research and quality control of fruit and vegetable processing.
