AsA is also known as vitamin C. AsA serves as a coenzyme, free radical scavenger, electron donor/acceptor, and substrate for the biosynthesis of oxalate and tartrate, among other functions. As the most important antioxidant in plant cells, AsA plays a crucial role in protecting chloroplasts from oxidative damage and is also one of the important indicators for measuring the quality of agricultural products. Ascorbic acid oxidase (AAO) catalyzes the oxidation of AsA to produce DHA; by measuring the oxidation rate of AsA, the AsA content can be calculated.
