Acidic Proteinase(ACP) Assay Kit

ACP is an enzyme that catalyzes the hydrolysis of proteins in acidic environments. This enzyme is mainly used in alcoholic fermentation, beer brewing, fur softening, fruit wine clarification, soy sauce brewing, and feed production. Under acidic conditions, ACP catalyzes the hydrolysis of casein to produce tyrosine; under alkaline conditions, tyrosine reduces phosphomolybdic acid compounds to generate tungsten blue; tungsten blue has a characteristic absorption peak at 680 nm, and the increase in its absorbance is used to calculate ACP activity.
