Alkali Proteinase(AKP) Assay Kit

AKP refers to a class of enzymes that catalyze the hydrolysis of protein peptide bonds under alkaline conditions and belongs to the serine protease family. In addition, this enzyme can also hydrolyze ester bonds and amide bonds, and possesses transesterification and transpeptidation functions. It is one of the major industrial enzymes and is widely used in industries such as pharmaceuticals, silk, food, and leather. Under alkaline conditions, AKP hydrolyzes casein to produce tyrosine; under alkaline conditions, tyrosine reduces phosphomolybdic acid to produce tungsten blue; tungsten blue has a characteristic absorption peak at 680nm, and the rate of increase in absorbance at 680nm is measured to calculate AKP activity.
