Pepsin is secreted by the gastric mucosal chief cells and breaks down proteins in food into smaller peptides. It is generally used for the differentiation of neurogenic hypochlorhydria, and conditions such as chronic gastritis, chronic gastric dilation, and chronic duodenitis can also lead to a decrease in pepsin secretion. Pepsin can catalyze the hydrolysis of hemoglobin, and the product tyrosine has a characteristic absorption peak at 275 nm. The enzyme activity is calculated by measuring the change in absorbance.
