Acid broth

Acid broth is a kind of liquid culture medium used to detect acid-resistant microorganisms in acidic foods. Its basic components are peptone and glucose, and its key feature is to adjust the pH to 5.0±0.2 with hydrochloric acid or phosphoric acid to create an acidic environment. The culture medium can inhibit the growth of non-acid-tolerant bacteria under low pH conditions, and selectively promote the proliferation of acid-tolerant microorganisms (such as lactic acid bacteria, yeasts and some molds), and is widely used for microbial spoilage inspection of canned foods, acidic beverages and other products.
