Its basic components are yeast extract and peptone to provide nitrogen source and growth factor, and its key additives are sucrose as carbon source and agar as coagulant. This culture medium can inhibit the growth of most bacteria through acidic pH condition (natural pH is about 5.4-5.6) and support fungi to form typical colony morphology. It is widely used in the separation and counting of yeasts and molds in food, beverage and environmental samples, and is a standard tool for microbial quality control.
